A decade ago, mezcal was very popular - bartenders wanted to pick up the only bottles in the village of Del Maguey while drink lovers proudly called their favorite drink "Oaxacan Old Fashioned".

Now tequila Cristalio is becoming one of the most sought after agave products. But what is Cristalino?

"Tequila Cristalino is a tequila añejo that has been filtered to remove color and dirt," says sommelier Richard Betts, founder of Sombra Mezcal, Astral Tequila and the tequila brand Como. 

"This process usually occurs by filtering the liquid through the coal, as it has aged in the barrel. This removes some of the woody notes of tequila, but leaves intact the flavors and structures given by the barrel." 

At Cristalino, "tequila is mixed and filtered through a process to soften any harsh notes while still preserving the aging characteristics in taste and aroma, giving the liquid a crystalline appearance," describes Maestro Dobel's Tequilero, Alex Coronado. Think of the richness of an old, crystalline tequila. 

Coronado and his team brought this method of filtering to the tequila scene in the early years with the launch of "Dobel Diamante". Since then, a number of new brands have joined the ranks of Cristalino, with over a dozen launched in the last six months. 

This increase is in line with the tremendous increase in the tequila category over the pandemic - the tequila category expanded by 46% last year.

But the category still has to do. "It is important to note that not all Cristalinos are the same; they are made in different ways, "Betts explains." The Cristalino are not currently listed as an official category by the Consejo Regulador del Tequila (CRT), the government entity responsible for tequila regulations in Mexico.

However, for manufacturers to call their tequila Cristalino, they must demonstrate that the liquid is aged in oak barrels and explain the process used to remove the dye. I prefer to think of Cristalinot as an "Añejo Claro".

Due to the unregulated nature of the category, noting that brands can use everything from distributors to artificial sweeteners to create the essence of the drink. 

"Not all Cristalins are created equal," Betts continues. 

"First of all, the way the tequila is made matters. Is it traditionally made or is it made using a free spreader? Second, all Cristalinot should keep the tequila age as well. There will be big differences between a Cristalino reposado and an añejo Cristalino, so it 's important to know what you're paying for. "
